BakeFlora is a unique blend of Inulin, Oligofructose, and Roxlor’s proprietary sweetening system. It has a sweetness profile similar to sugar and is designed to mimic sugar on a Kg for Kg. basis in certain applications. It is designed to utilize the functionality of Inulin and Oligofructose as well as their health benefits. The addition of the sweetening system provides a sweet clean taste and makes the product easier to use in your formulations.
BakeFlora can be used as a straight sugar substitute or in combination with other sugar replacers, such as sugar alcohols, depending on the application. In baked goods and solid applications, such as bread, where sugar does not play a vital role in the structure of the product BakeFlora can be used as a straight sugar substitute. In semi-solid applications, such as yogurt, BakeFlora also can be used as a straight substitute for sugar. In these types of applications substitutions would be made on a Kg for Kg basis for sugar. BakeFlora can be used, but is not recommended, for beverage applications because some solubility issues can arise.
BakeFlora is often used in combination with other sugar replacement products. The most common applications are combining BakeFlora with sugar alcohols such as Maltitol, Sorbitol, Mannitol, Lactitol, and Erythritol. When combining these products 25-50% of the sugar alcohol is replaced by BakeFlora. The amount replaced depends on the sugar alcohol used. This combination will improve the mouthfeel and texture of a product because of BakeFlora’s organoleptic properties. It will mask the cooling effect (minty aftertaste) of the sugar alcohols and remove the need to add high intensity sweeteners. BakeFlora will also help mask aftertastes from other ingredients in a formulation and as with all Roxlor products will provide a clean sweet taste to a product.
Adding BakeFlora to a formulation will increase the soluble fiber content of a product as well as provide prebiotic fiber. BakeFlora has been shown to increase calcium and magnesium absorption. The addition of fiber, combined with the reduction of sugar alcohols will also help to relieve some of the laxative effect generally associated with sugarless products.
BakeFlora is a Low Glycemic product that is well suited for low GI, diabetic and weight maintenance products. Because it is Low Glycemic it will have little effect on blood sugar levels and will not cause a significant insulin response. BakeFlora also has approximately ½ the calories of sugar and therefore is good for reduced calorie and diet products. Because BakeFlora contains healthy prebiotic fiber it will allow for label claims based upon fiber content, soluble fiber content and prebiotic content based on local regulations.
